One-Pan Meal Prep | Sausage & Veggies

Short on time, but want to ensure you're getting your veggies? Love to meal prep but hate all the clean-up afterwards? Try out this One-Pan Sausage & Veggies meal prep! All you need is a baking sheet, a colander for rinsing your veggies, a knife, and a cutting board.

Not only is this a quick way to put together several days' worth of meals, but it contains a rainbow of different colored veggies to keep you on track and feeling great.

Veganize it! Instead of using animal protein, feel free to use a plant-based "sausage alternate". We like the Beyond Meat sausages! They are the most like the real thing, and pack in a god amount of plant-based protein for a well-rounded meal.


- 1-2 red bell peppers

- 1-2 green bell peppers

- 1 red onion (optional, not pictured)

- 2 broccoli heads, chopped into florets

- 3-4 medium sweet potatoes

- 1 package of chicken sausage or plant-based "sausage"

- 1-2 tbsp. olive oil

- Salt, pepper, garlic & smoked paprika


  1. Preheat oven to 450F. Place rack in the middle of the oven.

  2. Using a colander, rinse and dry all of your vegetables.

  3. Roughly chop peppers and onions (do not dice or finely chop, as they will then cook too fast compared to the other ingredients. Cut sweet potatoes into 1/2" cubes. Chop the head of the broccoli, remove and discard stem.

  4. Place all chopped vegetables onto a large baking sheet.

  5. Slice sausages into 1/2-1-4"rounds. Add to the baking sheet.

  6. Drizzle approximately 1-2 tbsp. of olive oil over all of the chopped veggie and sausage. Season liberally with salt, pepper, smoked paprika, and garlic.

  7. With your hands or a large spoon, mix together so that the olive oil is covering all of the vegetables and sausage, and all the spices are mixed in.

  8. Place in oven, and cook for approximately 20-25 minutes, tossing halfway.

  9. Once cooked, set aside to cool slightly before placing them into meal prep containers. Top with feta cheese for an added salty/savory flavor!
